Hot Sesame Marinade
Another one of my favorite Denzel Mitchell creations, this is a sauce you’ll want to keep stocked in the fridge to pour over your favorite veggies. Makes 4 to 6 servings.
1 tablespoon minced fresh ginger
2 large cloves garlic, peeled and crushed
¼ cup nama shoyu
4 tablespoons maple syrup
Fresh juice of ½ lemon
2 tablespoons raw apple cider vinegar
1 tablespoon sesame oil
2 tablespoons sesame seeds
Cayenne pepper or minced fresh jalapeño or serrano chilies, to taste
2~3 pounds of your favorite vegetables (zucchini, broccoli, shiitake mushrooms, bean sprouts, bok choy, etc.), cut into medium chunks
Place ginger, garlic, soy sauce, maple syrup, lemon juice, vinegar, sesame oil, sesame seeds, and peppers in a large bowl and stir until well blended. Pour over vegetables and toss to make sure all vegetables are coated with marinade. Marinate the vegetables in the sauce for 2 hours. Drain and serve. Also makes a great marinade for tofu or tempeh.

Miso Sexy Dressing
This recipe comes from Denzel Mitchell Jr., a wonderfully creative vegan chef. This dressing definitely lives up to its name. Makes 2 to 3 servings.
½ cup raw tahini
¼ cup freshly squeezed orange juice
2 tablespoons miso
4 tablespoons extra virgin olive oil
½ jalapeño, chopped
Place all ingredients in a blender and blend until smooth. Add water to the orange juice for a thinner consistency. Enjoy as a dip or use as salad dressing.
