My friend Traci Thomas knows her smoothies. She says: “I introduced this combination to my omnivorous family members and received rave reviews!” Makes 1 serving.
1 ripe frozen banana, peeled and sliced
1 cup strawberries (remove green hulls)
1 cup orange juice or coconut water or plain water
Optional: 1 cup chopped kale or spinach (fresh or frozen) to make it a green smoothie
Place all ingredients in a blender and process until smooth and creamy. Enjoy immediately!
Coconut Cashew Milk
Smooth and creamy, this is a delicious homemade nut milk. Drink it plain or use it in a smoothie. Coconut water is available in health food stores. Makes 2 or 3 servings.
1½ cups cashew pieces
3 cups coconut water
3 medjool dates, pitted
½ teaspoon vanilla extract
Place all ingredients in a blender and blend on the highest speed. Serve immediately. For a thinner nut milk, strain the liquid through a cheesecloth.
